A bonus character is unlocked each time story mode is successfully completed.
Then at the character selection screen, highlight Squall and press the indicated
button(s) to play as the corresponding character:

Quick Start
Immediately before a race begins, hold Square + Up.

Behemoth Class
In story mode come in first On every level for this class. This is the mode before Bahumut class. By Jon Lovell
Skip A Half Of A Level On The Bahamut Level
Right after the first right hander, not the S part, drive off the edge and if you get lucky you will fall onto a ramp. If you do, will beat Bahamut easily.
Race With The Fastest Racer
Beat the game over and over until you get Squall. Continue until you highlight squall and push L1+R1. The racer name box says S.S. Invincible. This is the fastest racer there is. Just to be safe, take the grip up ability so you get more control.
Mirrored Tracks
Finish in first place in every stage (including the Final Fantasy 8 track) in the Bahamut class in grand prix mode to unlock the mirror mode selection on the options screen.
Bahamut Class
Finish in first place in every stage (including the Final Fantasy 8 track) in the Chocobo and Behemoth class in grand prix mode to unlock the Bahumut class.
