To give low stamina to your opponent you punch the body. It makes them more tired, so they punch less and their punches hurt less too.

Max Stats On Legacy Mode

Win the amatuer tournement, get the stat points then go to punch totals and hit the back button. You will go back to the point screen just repeat this till your stats are full.
