You never thought it would turn out like this—an all-out chase where you’re the hunted. And the hunter. Now you must get behind the wheel and risk everything to infiltrate a ruthless international crime syndicate and take them down. The man you’re after is a maniac behind the wheel, and he’s driving like his life depends on escape, which maybe it does. He’s the one with all the answers you need, you will track him down. Needless to say, that fleet of police cruisers in your rearview mirror won’t make things any easier. It will take all of your experience—and every ounce of skill—to outrun the law, take down the enemy, and unlock the truth that puts an end to this chase once and for all.

The Newer Dodge Challenger R/T (costs 60, 000) is the best car I've found. Others include the Corvette Z06, Mercedes-Benz SLR McLaren, classic Dodge Challenger, and any heavy car tuned for Torque and Acceleration. Tuners (with lots of handling) are not recommended for cop chases.
If you want a headstart, keep your rpm needle a darker red. You will start at about 50 mph and you get 300 SP!
If you're in a pursuit that you want to get out of really fast, drive to the bridge that is up that you jump over in the first driving mission. The cops won't chase you over the bridge. If there is a helicopter on you, just wait for it to run out of fuel. NOTE: this doesn't work on the last mission of the game.
You must build up your bounty to progress through the career. But if find you're having a hard time building up bounty, you can always go back and replay earlier Wanted events to gain more bounty!
