To unlock the Brain Trophy, go to the options menu and then to the cheats entry section and enter: BRAAAINS.

Level Up (torture And Your Level)
What you do is, unlock the voodoo doll and constantly use the eye button. This is because it's the fastest effect is over and do it again and again until you level up. Also this also rises your torture, so if you want to nurture you zombie, this is not the best way to go.
