Go to the title screen and hold L1 and press up, down, left, right
Blast him to the body with the special upper cut punch. Don't worry about dodging, just march straightfoward and walk through his punches. It helps to move slightly to the left while throwing the special uppercut so it lands cleanly in the body. Knock him down three easy times and you win. Easy enough. You should always move forward and be aggressive as hell.

Kobashi is a defensive weak fool. March through his punches. He's going to do nothing but retreat, so you have to chase him. I usually charge forward with the dash (quickly press up twice, holding it the 2nd time) and blast the fool with the special uppercut. Just stay aggressive with him and blast him in the body with that special uppercut, should be down in 1:30 or so of round 1.
All you have to do to unlock extra arenas in VS. mode is to beat any opponent in that arena in story mode.
Defeat any boxer in story mode to unlock him in versus mode.
